Created using the three classic Champagne varieties in the cool climate South Australian region of Coonawarra. This parcel spent 10 months on lees adding texture and complexity. The style is extra brut with a residual sugar level of 4.8 g/L.

I thankfully have two very lucky nephews. James Cox narrowly missed being crushed in his ute by an out of control truck in Dee Why in late 2014. Sam Morgan amazingly fought off and survived an attack by a Bull Shark whilst surfing at Ballina in late 2015. This sparkling wine celebrates the good fortune that we still have these two great young men in our family! Gold Medal – Gilbert & Gaillard International Challenge 2020. Light yellow-gold with pale green highlights and fine bubbles. Nose of nicely ripe white fruits with liquorice touches. Pleasant, fresh palate showing more of the nose aromatics and wonderful thirst-quenching sourness on the finish. Drink as an aperitif or wine for food.

The palate is finely textured and flowing, backed by vibrant acidity, offering excellent structure and length. At its best: now to 2025.
91 points (4 Stars) – Stephen Read, Wine Matrix Made from the traditional three Champagne grapes Chardonnay, Pinot Noir and Pinot Meunier, a wine that is true to style. The colour is clear pale straw with a persistent bead. There are lifted aromas of stone fruit, apple and citrus with a subtle bready note. The palate has a creamy mouthfeel with layers of fruit and complexity, balanced by good acid and a long lingering finish.
