Wine making notes
|
This SA126 clone Cabernet Sauvignon was sourced from a gravelly loam soil vineyard from the Wallcliffe sub-region. The fruit was crushed and destemmed then fermented in static fermenters at 26 degrees C for 5-7 days. A portion of approximately 30% was left for a period of extended maceration on skins followed by a gentle pressing adding plushness and a savoury textural element. The various batches underwent MLF in a combination of tank and barrel for 14 months maturation in a selection of French Oak barriques – 25% new.

A medium to full bodied Cabernet with plenty of depth offering blackberries, dark chocolate and cassis. The pristine fruit and fine tannins combine to produce a very complete wine, quintessential Margaret River Cabernet with an elegant structure and a wonderful persistence of fruit. A classy wine with cellar potential of 10+ years.

Shoulder to shoulder we stand with pride, love and unity
Erik de Haart survived one of Australia’s worst tragedies - the 2002 Bali bombings. The heartbreaking loss of his Coogee Dolphins team mates & the horrendous aftermath of the attack will never leave him. Whilst his courageous and selfless efforts on that terrible night saved many lives, Erik personally retreated from the hero tag that everyone else believed he deserved. After many years of suffering in silence, Erik has displayed even more courage to bring attention to one of our society’s most insidious dangers – the mental anguish he suffers through the guilt of those he couldn’t save. Erik’s powerful story will continue to assist other people in our community to seek assistance with their own problems. Whilst we will never know the ever present emotional pain he endures, we stand shoulder to shoulder with Erik in pride, love & unity. Fairly deep red, still in its youth. The nose opens up to red berry fruits then becomes more complex, with smoky, peppery and Havana cigar accents. The palate shows seductive, ethereal fullness, velvety palate weight and freshness. A great Cabernet.

96 points (5 Stars) – Sam Kim, Wine Orbit Sophisticated and refined, the engaging bouquet shows cassis, Black Doris plum, cigar box and fragrant spice notes, leading to a concentrated palate that offers fine texture as well as outstanding depth and intensity. Very long on the finish with terrific fruit power backed by brilliantly pitched chalky tannins. At its best: now to 2030.
94 points (5 Stars) – Stephen Read, Wine Matrix There are complex velvety aromas of black fruits, vanilla oak, dark chocolate along with some floral hints that lead to the multilayered palate. Starting with the fine integrated tannins, layered with blackcurrant fruit, dark chocolate, balanced with firm acid leading to a long solid finish. The best is yet to come for this wine cellar for 8+ years.
94 points (5 Stars) – Leo Daly, Wine Matrix Deep dark red in the glass while the nose opens with cassis and minty spice. Cigar box notes just asks the question ‘what’s next’? The palate is layered in symphony as blackcurrant, plum and dark chocolate come to the fore. This is a medium to full bodied style, typical of Margaret River Cabernet, that finishes with some grippy tannins that are balanced with a blanket of softness.
9.2/10 – Max Crus Named in honour of Erik de Haart, one of the Coogee Dolphins who selflessly helped many victims of the Bali bombings in 2002, shunning the hero tag but himself suffering the anguish of not being able to help others. How could you not approach such a wine with due reverence. Tough act for a wine to follow, which it does with aplomb.
91 points – Huon Hooke, The Real Review Medium to full red colour with a good tint of purple, the aromas toasty, nutty and savoury - with suggestions of walnut as well as plummy fruit notes. It's medium to full-bodied and firm, loaded with tannin and good flavour depth. Acidity, too. Long carry. A big wine, with plenty of grunt. It will reward patient cellaring. Drink 2019 to 2034.
