Cabernet Sauvignon

Margaret River, WA
Wine making notes
Margaret River has a global reputation for producing some of the world's finest Cabernet Sauvignon.  The fruit for this wine came from a gravelly loam soil vineyard in the Wallcliffe sub-region. The fruit was crushed and destemmed then fermented in a combination of static and rotary fermenters at 26 degrees C for 7 days. Approximately 20% of the components experienced a pre-fermentation cold soak, with another 30% being left for a period of extended maceration on skins for 28 days.  The various batches underwent malolactic fermentation in tank and barrel before 14 months maturation in a selection of 20% new French Oak barriques. Cellar potential of 10+ years.
Colour
Deep red with vibrant ruby hues
Nose
Classic Margaret River aromas of blackcurrants, berry fruits and dark plums layered with spicy, toasty oak
Palate
Generous and rich, the palate is full of jubey forest fruits, cassis and chocolate characters. The wine structure is full bodied with attractive fleshy fruits held together with fine tannins and a beautiful, lengthy finish. Classy and complex.

Reviews
96 points (5 Stars) – Leo Daly, Wine Matrix  Deep red in the glass, the nose offers blackcurrent and dark plum. The palate is opulent but remains layered, with generous servings of chewy fruit, dark chocolate and spice while the oak barrel fermentation just adds another layer to its complexity. The finish completes the deal with some lingering tannins. Wonderful now but will gather some character with cellaring. For me, I reckon go to it now.

95 points (5 Stars) – Sam Kim, Wine Orbit   Classically expressed, this gorgeous cabernet shows cassis, spiced plum, tobacco, cake spice and vanilla characters on the nose. The palate exhibits excellent concentration and persistency, while remaining elegant and focused. It is wonderfully structured by fine/firm tannins, offering plenty of delectable flavours as well as savoury nuances. At its best: now to 2030.

9.5/10 – Max Crus  It's only 13.5 per cent (only!) yet this feels like a big wine, and more importantly it feels like a good wine. It has that certain air of WA poshness about it like, say, Julie Bishop...hmmm maybe not, and it’s much bigger than her.

94 points – Rob Geddes MW  Very Margaret River on the nose with blue berry and black current aromas, leading to elegant medium bodied palate with classic cabernet fine tannin length and well balanced.

93 points – Patrick Eckel, Wine Reviewer  The nose enjoys cigar box and graphite top notes to blackberry and mulberry fruit. The palate shows a mature cabernet that is melding primary black fruit influences with the cedar and chocolate nuances that come from time in bottle. The tannins and acid are well knit and provide both texture and length. The wine finishes with a graphite edge to leathery black fruits and very good length. Optimal drinking 2020-2028.

93 points – Stephen Read, Wine Matrix  Already 5 years old this Margaret River Cabernet is showing its class. Deep dense purple with ruby tones leading to an intense complex aromas of sweet cassis, spicy oak, and plums with hints of tomato bush and mint. The palate is silky with fine grain tannins, layers of sweet black fruits, balanced with spicy oak and clean acid. Enjoy now but will improve with 6+ years of careful cellaring.

92 points (4 Stars) – Huon Hooke, The Real Review  Deepish, bright, youthful red/purple colour, with a fresh, bright cassis aroma, mulberries and cranberries too. Fresh, primal & uncomplicated A big wine, full-bodied and laden with firm tannins. It's bright and youthful and will reward cellaring. Good density, structure & persistence. Drink 2019-2035.
